How a Güde knife is made

Up to55 manual steps, from a single bar of steel

Each blade is drop-forged from one bar of chrome-vanadium-molybdenum steel, ice-hardened to 57–58 HRC, then ground, polished and sharpened by hand in Solingen. The Güde family has run the manufactory for four generations, since Karl Güde founded it in 1910.

See the 55 stepsOur history
  1. Drop-forged

One bar of steel is shaped under the drop hammer, so blade and tang are a single piece.

  2. Ice-hardened

Heat-treated and ice-hardened to 57–58 HRC, so the edge holds longer between sharpenings.

  3. Sharpened by hand

Ground, polished and given its final edge by hand in the Solingen workshop.

  4. Four generations

Run today by Dr. Karl-Peter Born, great-grandson of founder Karl Güde.

The all-purpose knife

THE KNIFE

Güde introduced THE KNIFE in 2015: one blade for slicing, chopping and dicing, with a shorter handle that brings your grip closer to the edge.

What does “up to 55 manual steps” mean?

It counts the operations done by hand on a blade in Solingen, from forging and hardening through grinding, handle fitting and final sharpening. The Alpha lines, Karl Güde and Damascus go through up to 55; Delta, Franz Güde, SYNCHROS and THE KNIFE up to 40; Kappa up to 30. Compare the lines

Which Güde knives are dishwasher-safe?

The Alpha line with black Hostaform handles, the Universal line and the all-metal Kappa. Every wood and Micarta handle is hand-wash only: rinse, dry and put the knife away.

What if I need to return a knife?

You can return an item within 30 days of purchase, and every knife is covered by our Limited Lifetime Warranty. We prepay return postage when an item arrives damaged or incorrect. Returns and refunds

Which line should I start with?

Alpha is the widest range, with dishwasher-safe black Hostaform handles and wood options on the same blade. If you want one knife that does most of the work, start with a chef’s knife or THE KNIFE. The line comparison sets handles, care and prices side by side.

How do I keep a Güde knife sharp?

Hone the edge on a sharpening steel every few uses, and sharpen on a whetstone when honing no longer brings it back. Cut on wood or plastic, never glass or stone. The care and sharpening guide walks through it step by step.
