Compare Güde Knife Lines

Every Güde knife is made in Solingen, Germany, by the same family company that has made knives there since 1910. Nearly every line starts the same way: a blade drop-forged from one bar of stainless chrome-vanadium-molybdenum steel, ice-hardened, and sharpened by hand. What changes from line to line is the handle, the bolster and the shape. This guide puts the lines side by side so you can choose by how you cook and how you like to clean up.

Caring for your knife

Only three lines are made for the dishwasher: Alpha with the black Hostaform handle, the all-metal Kappa and Universal with Hostaform handles. Every wood and Micarta handle should be washed by hand with warm water and a little soap, then dried right away. Damascus is not rust-proof and must be dried immediately after each use. Whatever the line, a few strokes on a honing steel each week keep the edge straight between sharpenings.

Questions

Which Güde line should I start with?

For most kitchens, Alpha. It has the widest range of shapes and its Hostaform handle goes in the dishwasher. If you want wood, Alpha Olive uses the same blade with an olive wood handle.

Do the lines use different steel?

Except for Damascus and the Universal serrated knives, every line uses the same stainless chrome-vanadium-molybdenum steel, drop-forged and ice-hardened in Solingen. What changes from line to line is the handle, the bolster and the shape. Damascus is hand-forged from more than 300 layers.

Which Güde knives are dishwasher-safe?

Alpha with the black Hostaform handle, the all-metal Kappa and Universal with Hostaform handles. Every wood and Micarta handle, and all Damascus blades, should be washed by hand and dried right away. Even dishwasher-safe knives keep their edge longer when washed by hand.

What is a double bolster?

A bolster is the thick band of steel where the blade meets the handle. Güde's double bolster adds a second one at the end of the handle, which balances the knife and protects the handle. SYNCHROS leaves the front bolster off so the whole edge can be used and sharpened.

Are all Güde knives made in Solingen?

Yes. Every knife is made by Franz Güde GmbH in Solingen, Germany, a family company since 1910.

What does the warranty cover?

Every knife comes with our Limited Lifetime Warranty, and you can return an order within 30 days. Questions go to info@gudeshopusa.com.
