Paring & Utility Knives
Paring and utility knives do the close work: peeling, trimming, coring, segmenting, and the small cuts that a chef’s knife is too long to make. Güde forges them exactly as it forges its largest blades, from a single bar of chrome-vanadium-molybdenum steel, ice-hardened and then ground and sharpened by hand in Solingen across more than 40 manual operations. The forged double bolster on most models puts weight behind a short blade, which is what keeps the tip under control.
Blades run from 3 to 5 inches, with paring knives at 3, 3.5 and 4 inches and utility knives at 5. Nearly every Güde series appears: Alpha in Hostaform, Alpha Olive, Alpha Pear, Barrel Oak, Delta in African blackwood, the all-metal Kappa, the bolsterless SYNCHROS in smoked oak, Mikarta, a Damascus paring knife with a desert ironwood handle, and the high-carbon Franz Güde in plum wood. A sharp-point paring knife, a Bavarian utility knife and the Universal 4 inch knives, including a six-piece set, are also stocked.
