Santoku Knives

The santoku is shorter and straighter than a chef's knife, with a blade that meets the board along most of its length and a tip that curves down rather than up, so the cut is a clean downward push instead of a rock. Güde drop-forges it from one bar of chrome-vanadium-molybdenum steel in Solingen, ice-hardens it and sharpens it by hand. On the hollow-edge models, oval scallops are ground into both sides of the blade so wet slices break away instead of clinging.

Blades come in 5 and 7 inches, plain-edged or hollow-ground. The Alpha series in black Hostaform and the Alpha Olive series in olive wood cover both lengths and both grinds, with a 7-inch hollow edge in Alpha Pear and a 7-inch Franz Güde Damascus santoku, over 300 layers, on a desert ironwood handle.
