Salmon Slicers

A salmon slicer is long and narrow so that a slice comes off in one continuous stroke rather than several sawing passes, which is what keeps the cut face smooth and the slice thin enough to see through. The blade is drop-forged from a single bar of chrome-vanadium-molybdenum steel in Solingen, ice-hardened, and given its long edge by hand.

Two knives are in this collection, both from the Alpha series with black Hostaform handles and a forged double bolster: a 10-inch and a 12-inch, the shorter for fillets and cured meats, the longer for working down a whole side.
