Description
The Güde Alpha Bread Knife is one of Germany's finest serrated knives — hand-forged, ice-hardened, and built to last a lifetime. Whether you're slicing a crusty sourdough, a delicate brioche, or a layered cake, this 12" blade glides through with zero effort and zero crumbs.
Thanks to the exceptional sharpness of the hand-forged blade, even warm, soft bread or rustic farmhouse loaves can be portioned effortlessly and cleanly. Breads with a particularly hard or thick crust, which quickly pushes conventional knives to their limits, can be cut precisely and effortlessly.
The bread knife is also ideal for portioning fruit and vegetables with a firm skin, such as melons, pineapples, or pumpkins. Large sheet cakes or sandwich rolls can be cut with a single, clean stroke thanks to the long blade and perfect sharpening.
Güde's signature "pointed-tooth double-side" serrated edge
Güde's signature "pointed-tooth" double-sided, serrated edge is engineered to grip and cut simultaneously — preserving the structure of soft bread while powering through hard crusts. The result: perfect bread slices
Built for ambidextrous use
The double-sided grind means this knife works equally well for right- and left-handed cooks. No compromises.
Hand-Forged Steel, Ice-Hardened in Solingen
Every Güde Kiritsuke begins as a single bar of rust-resistant chrome-vanadium-molybdenum steel. It's hand-forged, then ice-hardened in the Solingen factory to 56 HRC — hard enough to hold a razor edge through intensive daily use, flexible enough to handle a full range of cutting tasks without chipping. Over 40 manual steps go into each finished knife, making it a genuine piece of Solingen craftsmanship.
Güde's signature double bolster acts as a precision counterweight, bringing the knife into perfect equilibrium. Combined with full-tang construction, every gram is accounted for — so the knife feels like an extension of your hand, not a tool you're managing.
Micarta: Beauty That Grips Back
Strikingly beautiful and remarkably tough, Micarta leaves the microscopic fibers of its canvas or linen base exposed, creating a naturally slip-resistant texture. Unlike other handle materials that turn slick when wet or greasy, Micarta actually grips tighter—so you don't have to squeeze as hard, even through long prep sessions. Micarta will not crack or shrink
Care & Maintenance
Clean with a damp cloth immediately after use. Do not put in the dishwasher. Avoid leaving the knife uncleaned after cutting acidic foods, and never use harsh or abrasive cleaning agents. With proper care, this knife is built to last a lifetime.
