The K-Tip Blade: Two Knives in One

The approximately 8.4-in blade is shaped around the traditional Japanese Kiritsuke profile — itself a hybrid of the versatile Gyuto and the precise Usuba — and defined by its characteristic angled K-Tip. This geometry unlocks two distinct cutting styles:

The push-cut (Japanese technique): The long, flat edge lets you guide the knife forward with a smooth pushing motion, minimizing cell damage for cleaner, sharper results. Ideal for sashimi, raw fish, and delicate vegetables.

Precision work: The pointed K-Tip scores fish before frying, separates meat from bone, and handles decorative vegetable cuts with total control. For best results, work at a flat cutting angle of 15°.

The result is a knife equally at home finely portioning fish, precisely chopping herbs, slicing meat, and producing clean, uniform cuts across every ingredient.

Hand-Forged Steel, Ice-Hardened in Solingen

Every Güde Kiritsuke begins as a single bar of rust-resistant chrome-vanadium-molybdenum steel. It's hand-forged, then ice-hardened in the Solingen factory to 57–58 HRC — hard enough to hold a razor edge through intensive daily use, flexible enough to handle a full range of cutting tasks without chipping. Over 40 manual steps go into each finished knife, making it a genuine piece of Solingen craftsmanship.

Güde's signature double bolster acts as a precision counterweight, bringing the knife into perfect equilibrium. Combined with full-tang construction, every gram is accounted for — so the knife feels like an extension of your hand, not a tool you're managing.

Hostaform handle 

Hostaform handle, a material widely recognized for its excellent balance of mechanical strength, extreme toughness and low moisture absorption. Secured with stainless steel rivets (with a center palm rivet in aluminum), the handle is built to last as long as the blade.

Care & Maintenance

Clean with a damp cloth immediately after use. Do not put in the dishwasher — the aluminum rivets and olive wood handle require hand washing. Avoid leaving the knife uncleaned after cutting acidic foods, and never use harsh or abrasive cleaning agents. With proper care, this knife is built to last a lifetime.
