The Güde Alpha Nakiri is a specialist vegetable knife rooted in Japanese cutting tradition. Its distinctive rectangular blade with a wide, straight edge is designed for a single purpose: clean, precise vegetable cuts — without tilting, rocking, or guessing.
German steel, Japanese geometry
Thin blade for fast, clean chopping. The full-width cutting edge contacts the board in a single motion — every slice is uniform, from the first cut to the last.
Technique — up-and-down, not back-and-forth
Unlike a Western chef's knife, the Alpha Nakiri is built for a straight vertical stroke. Place the blade, press down, lift, repeat. The wide blade doubles as a bench scraper: slide it under your chopped vegetables and transfer them directly to the pan. For paper-thin slices, use the claw grip for maximum control.

Hand-Forged Steel, Ice-Hardened in Solingen
Every Güde Kiritsuke begins as a single bar of rust-resistant chrome-vanadium-molybdenum steel. It's hand-forged, then ice-hardened in the Solingen factory to 57–58 HRC — hard enough to hold a razor edge through intensive daily use, flexible enough to handle a full range of cutting tasks without chipping. Over 40 manual steps go into each finished knife, making it a genuine piece of Solingen craftsmanship.
Güde's signature double bolster acts as a precision counterweight, bringing the knife into perfect equilibrium. Combined with full-tang construction, every gram is accounted for — so the knife feels like an extension of your hand, not a tool you're managing.
An Olive Wood Handle Like No Other
The handle is crafted from carefully selected, aged Mediterranean olive wood — individually grained, finely polished, and exceptionally hard. No two handles are alike. The natural figuring deepens over time, as the wood slowly develops its own patina, shaped by your kitchen and your hands. Secured with stainless steel rivets (with a center palm rivet in aluminum), the handle is built to last as long as the blade.
Care & Maintenance
Clean with a damp cloth immediately after use. Do not put in the dishwasher. Avoid leaving the knife uncleaned after cutting acidic foods, and never use harsh or abrasive cleaning agents. With proper care, this knife is built to last a lifetime.
